THE Kitchin in Leith was elected today to a small and exclusive band of restaurants which are at the top of their game in technique, flair and imagination with the award by the AA’s inspectors of three rosettes.
The remarkable recognition is the latest accolade in a stunning run of
successes which have made the Michelin-star Kitchin one of the Britain’s
most sought-after destinations. Only 142 restaurants in the UK achieved
three rosette status last year, with just 20 in Scotland.
The award is made only after rigorous inspection procedures which
scrutinise every aspect of the restaurant’s offering. The inspectors
recognised that chef patron Tom Kitchin, who studied under some of the
world’s greatest cooks, has had a dynamic and concept-altering effect on
the restaurant scene in Scotland.
His quick-witted and exciting approach to cooking – blending the finest
Scottish produce with classic French techniques – brought him his first
Michelin star just seven months after he opened, an unprecedented
Tom said: “The criteria for gaining three rosettes are extremely demanding
and we knew from the outset that we would have to be at the peak of our
performance to achieve this award.
“Our ambition now is to maintain and improve this level of service not
only for our loyal and valued portfolio of existing diners, but also for
the growing numbers of people who are finding out about the unique
