SHOPPERS from all over the UK will see kitchen assistant, Laura McMath’s recipe for a traditional Scottish dessert in a new cookbook.

The public voted the 22 year-old’s cranachan cheesecake top in the intu Braehead shopping centre’s Great Taste competition.

Now the 22 year-old, who works in the kitchens at Paisley’s Kibble Education and Care Centre, will see her recipe included in the Great Taste Cookbook, which has a print run of 100,000 copies and will be available free in 15 intu shopping malls.

The intu Braehead centre launched its Great Taste contest asking for cooks and chefs to submit their favourite recipes and the public then voted via Facebook for their favourite.

Laura’s was a clear winner to take first prize of a £150 gift card. The runner-up place, with a £75 gift card went to a chef at intu Braehead Marks and Spencer, Stephen Smith for his Moroccan spiced chicken thighs.

Third place and a £50 gift card went to shopper, Beth Montgomery, for her pistachio and walnut crusted pork loin.

Laura was given the chance to work as a trainee cook by Kibble’s executive chef, Donald Munro, and went on to become a full-time kitchen assistant. She said: “I wanted to do something that was a traditional Scots recipe and not difficult to make at home.

“I was shocked when I heard I had won the Great Taste competition and the response to my recipe has been great.

“On special occasions, like birthdays, I’ll make the cranachan cheesecake for pupils at Kibble.”

These top three recipes will join other winners from intu centres around the country in the cookbook, which can be picked up from the mall during the intu Braehead Great Taste Food Festival between September 27 and 29.

Assistant marketing manager at intu Braehead, Christine Macdonald, said: “We had some brilliant entries to our Great Taste competition and it appears they gave the voting public plenty food for thought.

“Well done to Laura who got her just desserts by winning the contest with a brilliant take on a traditional Scots recipe of cranachan cheesecake.”
